The Best Chocolate Cake

Bettina has been in Bali recently, so this month's recipe is a combination of winter chocolate indulgence plus elements of tropical warmth...Best Vegan Chocolate Cake by Bettina of @bettinas_kitchen

"This cake is an homage to the cacao bean. It’s got chocolate covered three ways! In cake form, as an icing, and best of all in the shape of the yummiest chocolate buttons. I have made it on many occasions for birthdays, dinner parties or just because sometimes we deserve a treat without the guilt attached! So easy to make and indulgently delicious."

Ingredients

Cake Base

2 cups apple pure

12 dates (pre-soaked)

1 tsp baking powder

1 cup (120 grams) buckwheat flour

1/2 cup (60 grams) almond flour

4-5 tbs cacao powder

1/2 cup (120 grams) agave

1/2 cup melted coconut oil

Vanilla pod

Pinch of salt

Chocolate Creme Topping

2 cups desiccated coconut

1 cup coconut oil

1/2 cup agave syrup

1/2 cup cacao powder

2-3 packets Ombar Buttons

1 mango (sliced)

1/2 cup roasted coconut flakes

Method

  1. Start by pre-heating your oven to 180°C.
  2. Put your apple pure and the rest of the cake base ingredients in a blender and mix well together. I would leave the agave and melted coconut oil until last so that you can really get the mix going.
  3. If you are using a cake form, then pre-grease with some coconut oil, or if you are using a silicone mould that usually won't be needed.
  4. Spread evenly and stick in the oven for 30 minutes or until you get a hard outer shell, but inside is still nice and moist.
  5. Let the cake cool down. While it’s cooling add desiccated coconut, coconut oil, agave and cacao into a blender and whizz until you get a creamy thick icing.
  6. Slice your mangoes beautifully and set aside.
  7. When your cake base has cooled down, spread the chocolate icing on top, arrange the mango slices, gently press down the buttons all around the cake and finish off with toasted sprinkles of coconut on top!
