from nature - foods ought to taste great and be beneficial from health. If it doesn't meet these criteria, then why are we eating it?
This is why we choose to add the whole fruit rather than just flavourings. We'll never add anything dodgy to our products, guaranteed.
Putting fruits in chocolate is nothing new, but it doesn't normally go much further than the odd raisin. What we like to do with Ombars is to combine the fruits with the chocolate - to actually infuse every bite with fruity flavours and enrich the chocolate with extra berries. The fruits and berries we use are all dried at low temperatures which allows the evaporation of nearly all the water contained inside the fruit: 10kg of fresh fruit, produces about 1-3kg of dehydrated fruit, with the same organoleptic (taste, smell and colour) qualities. So all the natural quality of the fruit is retained with no added colouring, flavouring or texturizing agents. Good eh?
