Ombar Filled Cookies

Ingredients
- 2 packets Ombar buttons (72% or Coco Mylk)
- 115g vegan butter
- 175g light brown sugar
- 1 tsp vanilla
- 1 flax egg OR 1 tbsp apple cider vinegar
- 275g plain flour
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tbsp cornflour
- 70g finely chopped Ombar 60% (72% & Coco Mylk will work too)
Method

Preheat your oven to 180C fan.

Beat together your butter and sugar until fluffy, and then add in vanilla and flax egg (or acv if using) and beat again until smooth.

In a separate bowl, whisk together your flour, salt, bicarbonate of soda and cornflour, and then add in to the other mix.

Add in the finely chopped chocolate and mix till combined.

Using a cookie scoop or a teaspoon, get some cookie dough and flatten slightly in your hand, and add 2 or 3 buttons to the middle.

Roll into a ball, making sure the dough surrounds the buttons fully.

Line 2-3 large trays with parchment paper - and add 6 cookies to each tray. Make sure you leave space between each cookie, as they will spread.

Bake in the oven for 11-13 minutes, or until golden. The less you bake, the more gooey they will be!
